TOMATO BASIL PASTA


Dan’s recipe. Cooked tomatoes are so good for us, especially for men.
Super easy/super healthy/super quick. This recipe makes a meal for two.

Ingredients: 1 can of diced tomatoes, fresh basil, garlic, olive oil, pasta (whole wheat or spinach would be best). Optional: parmesan cheese.
Kitchenware: garlic press, skillet, cheese grater, large pot, pasta drainer.

Put water in your large pot and bring it to a boil.
Drain liquid from canned tomatoes.
Drizzle some olive oil into your skillet. Add a clove or two of crushed garlic (up to you).
Turn heat on to medium. When the garlic starts to sizzle, just before it starts to brown, add tomatoes.

Pop the pasta into the boiling water (set timer) and stir tomatoes occasionally.
Take 4 large basil leaves and cut or chop into strips.
When the pasta is done (don’t forget, al dente pasta has a higher fiber content), drain it and put it in bowls.
Spread tomatoes over pasta, grate fresh parmesan cheese over that, and then sprinkle the basil strips over that.

    This was so quick and simple to make but so tasty!

    Most importantly, I DID NOT BREAK THE PASTA!! :o ) I am now preparing Turkey bolognese, which will be tomorrows’ meal. Can’t wait!

    You know, I just now noticed the picture of this recipe & I had to do a double take. When I was a little girl (& even now), my Mom used to make a version of this for me, my sister & herself for lunch. Granted, it didn’t have the rosemary & garlic, but it was still similar. She told us that her mother used to make this when she was a little girl, growing up during the depression. It was an inexpensive meal but it went a long way & was filling. My grandmother was orphaned when she was in her early teens & was raised in an orphanage/convent, so it might have been something that she learned there. She would also sometimes use macaroni instead of spaghetti. I am going to have to show this to Mom, I bet she’ll love it!

    This is very similar to my recipe. I notice you have a can of Hunt’s diced tomatoes. We use DelMonte Petite Cut diced tomatoes No Salt Added. It has only 50 mg of sodium which tates better when you are used to a low salt diet. We sometimes add sauted shrimp or chicken but its wonderful on its own. This is one of our favorite recipes.

    I can’t wait to try your Rosemary Chicken recipe today.
