AH LA LA SALMON PATTIES

Super Easy!!! / Super Healthy!!!!!

My husband Dan loved these; I probably made them once a week. I don’t measure any more, just eyeball it to get the right consistency. Based on a recipe in a great book called “Super Foods” by Dr. Steven Pratt.

Ingredients:
Patties: canned salmon, plain bread crumbs, egg, green onions, mustard, lemon. Note: if you don’t have any bread crumbs on hand, put a couple pieces of wheat bread into the toaster until toasted, then leave out to dry for 15 minutes or so, then put into a food processor and grind.
Remoulade: mayonnaise or soy mayo, ketchup, relish, ground ginger.
Kitchenware: skillet, bowls.

Put the salmon in a large bowl and gently separate the sections. Remove bones. Don’t worry about getting every little bone – the salmon has been cooked so the bones are soft. If you get a spine (see photo above), try to lift it out with bones connected.

Stir until flaky.

Add bread crumbs (half a cup?), an egg (or egg beaters), mustard, and chopped green onions.

Stir until mixed.

Take a handful and roll into a ball. If it’s too dry to maintain its shape, add some Egg Beaters or water. If it’s too wet, add some more bread crumbs. Flatten into patty.

Drizzle olive oil into skillet, add patties and brown over medium high heat.  Flip and when both sides are brown turn heat down to medium low. When insides are hot, serve.

Make the Remoulade:

In a bowl, put a couple tablespoons of mayonnaise, some sweet relish, ketchup, and ground ginger. Stir until smooth. Serve in a small serving bowl, or put a spoonful on the side, or put a spoonful on each patty and serve.

Salmon patties go great with Bluesy Green Salad.

Make a big batch and put in freezer bags – these freeze great.

    Jean the salmon patties are delicious! I had been searching for a recipe that was different from the salmon patties I make. I even made extra so I could freeze some for another time. That didn’t happen. All of them were eaten! The Remoulade was so good too! I am going to try the Turkey Bolognese next.

    My grandmother made salmon patties at least once a week, so many years ago, I hated them as a kid. Now I can’t imagine why, I use regular onions but I am going to do it this way, It sounds even more delicious. I love the idea of freezing a few for nights I don’t want to cook.
