    Hello Jean!

    I have been a fan of Dan and his music since the early 1970′s. I struggle with my own illness now and I often take comfort in Dan’s tender lyrics and melodies. I tried Dan’s Turkey Bolognese recipe and I LOVED it! Here is one of my Sicilian Grandmother’s favorite recipes, I hope that you will enjoy it. Please feel free to share with all!

    Chicken and Cheese Tortellini Soup

    INGREDIENTS:
    Two cooked skinless chicken breasts, diced
    8 oz spinach cheese tortellini
    32 oz chicken stock
    4 cups water
    1 6 oz can Italian style tomato paste
    1 cup chopped spinach
    1 cup chopped onion
    1 cup sliced celery
    1 cup diced red bell pepper
    1 cup fresh or frozen green peas (not canned!)
    ½ cup dry white wine
    ½ cup half & half
    1 tablespoon sour cream
    1 tablespoon olive oil
    1 tablespoon sea salt
    1 teaspoon chopped garlic
    ¼ teaspoon red pepper flakes

    DIRECTIONS:
    In a large stock pot, begin with water, chicken stock, salt, garlic and olive oil. Heat to just below boiling and add chicken, celery, onion, red bell pepper, spinach and frozen peas. Bring to a full boil then add white wine and tomato paste. Reduce heat to medium and stir until all tomato paste is dissolved. Add red pepper flakes and tortellini. Simmer and stir frequently until tortellini is cooked. When tortellini is cooked, add half & half and sour cream. Stir until well blended. Serve immediately.
    Garnish with curls of aged Parmesan cheese and a sprig of fresh rosemary and torn fresh crusty bread on the side.

    Jean, I tried two of your recipes. The Turkey Bolognese was a hit with the entire family. Had to double the recipe last time! They raved about it! Yesterday I made “Rizy Fish” for myself with a side of spinach, PERFECT! Thanks so much!
    I think a cook book might be in order! In your free time:)
